Taco Salad



Ahhh! Taco Salad! Need I say more?

Such a great all in one meal, sure to please every member of the family!

Did I mention it's a one-dish meal?!! Yeah! I like that part....a lot!

Taco Salad       (Print Recipe Here)

1 lb ground beef, browned and cooled
2 pkts taco seasoning
1 cup kidney beans, drained
1 head lettuce, torn or chopped
2 medium tomatoes, chopped
1 cup shredded cheese
2 cups coarsely crushed nacho chips

Brown ground beef. Add 2 pkts taco seasoning. Cool.

Place all remaining ingredients in large bowl, reserving chips. Add taco meat.

Dressing:
1 cup sugar
1 small onion, minced
1/2 cup vinegar
1/2 cup oil
1/2 cup ketchup
1/8 tsp black pepper

Mix dressing.

Immediately before serving pour desired amount of dressing over salad mixture. Stir gently until well coated. Add 2 cups crushed chips. Fold in. Serve immediately.

Refrigerate any remaining dressing.

Yield: 6-8 large servings
