This is an easy, taste of summer pie filling! An old stand-by in our family.
Refreshing Lemon Pie (Print Recipe Here)
5 TBSP cornstarch
1 1/4 cup sugar
1/4 cup plus 1 TBSP cup lemon juice
3 eggs, separated
1 1/2 cups boiling water
Baked Pie Crust (single)
Whipped topping
Combine cornstarch, sugar, lemon juice and egg yolks.
Pour into boiling water. Reduce heat.
Stirring constantly, continue to boil gently, until thickened and clear looking. About 4-5 min.
Cool.
Pour into baked pie crust.
Top with cool whip, or using whites of eggs make meringue. Chill before serving.
